Job summary
The captains job is to insure the proper execution of functions and events by communicating, directing and following up on the banquet service and bus staff. The captain is the liason between the service staff, the kitchen and utility staff, and the guest.
Summary of essential job functions

Leads service/bus staff by example.

Reviews all details of function with Banquet manager to insure that all the guests needs are met

Sets-up and assigns stations

Follows-up on employee assignments to insure that all details have been completed

Reviews with bartender all bar details including type of bar and special requests
-
Is familiar with all food being served at events including preparation, main ingredients, side dishes and garnishes. Communicates any specific instructions and information from chef to service staff.

Maintains communication with kitchen chef/expeditor throughout event sharing timing and rhythm of food service as well as guests needs

Works a station during the event performing service standards that set an example to other staff members

Always speaks to fellow staff, managers, and guests in a professional and respectful manner.

Welcomes new employees. Introduces new staff to our culture, standards and approach to hospitality while mentoring and fine tuning the service skills of new team members.

Assist in building displays and developing the aesthetics of a function

Performs all duties on Captain opening/closing checklist
Requirements
In this role you must be able to lift up to 30 lbs. unassisted and stand on your feet for up to 8 hours

Assistant Restaurant Manager
Position Summary:
Work with restaurant manager to help ensure quality of facilities and service.
Tasks:

Maintain contact with kitchen staff, management, and serving staff

Banquet Server
Job summary
The server’s job is to take care of serving our guests in a timely, courteous and efficient manner.
Summary of essential job functions

Reports to work punctually at the time of scheduled arrival
-
Reports to work dressed in complete uniform, clean, and wrinkle-free with name tag, and polished shoes.

Assists in the proper set-up and take down of all banquet functions
-
Attends all pre-function briefing meetings to review all details of function with Banquet Captain to insure that all requests, choices and specifics of the guests are met

Sets-up and details assigned stations according to the model table displayed by the Banquet Captain
-
Performs assigned tasks completely and efficiently to ensure the proper preparation and smooth execution of each function
-
Follows timing and direction of lead board closely
-
Communicates feedback from guests and/or associates to the Banquet Manager and/or Captain
-
Is familiar with all food being served at events including preparation, main ingredients, side dishes and garnishes
-
Always speaks to fellow staff, managers, and guests in a professional and respectful manner.

Welcomes the guest immediately and with a smile. Is attentive, outgoing and enthusiastic

Takes orders using menu cards with position numbers moving clockwise to avoid auctioning

Follows Mazzone Management service technique: Serve from the right, clear from the left, always serve and clear from and to a tray, beverages poured/served over right shoulder, coffee served from butler with shield etc.

Clears each table thoroughly between courses removing soiled silverware and glassware; re-silvers when necessary before next course
-
Quality checks are done as soon as possible after a course is served. If a guest is not satisfied take the plate away and notify the captain immediately

When possible waters, clears and re-coffees the whole dining room and not just your station
-
Maintain order of wait stations, does not leave drink glasses, foods to be wrapped or dirty dishes lying around.

Attends all training classes and educational opportunities to continually seek increased knowledge, and to enhance service skills
